Smoked Breakfast Fatty

Just like the old saying goes, breakfast is the most important meal of the day. In the last few days, I’ve been enjoying a smoked breakfast fatty for breakfast, and it is so delicious. I’ve been eating it for breakfast, but you could include waffles or pancakes with it! You could even make a breakfast sandwich with a slice of the smoked breakfast fatty, just put it between a biscuit and enjoy breakfast on the go! When I’m not eating the smoked breakfast fatty, I eat what I call the Texas Scramble. Smoked Breakfast Fatty Ingredient Breakdown Below are the […]

Bacon-Wrapped Dill Pickles

This smoked bacon-wrapped dill pickles recipe is the cousin of the TX Twinkie. It’s juicier and brinier (not hotter) but has some fantastic flavors just try it! For this bacon-wrapped dill pickles recipe, I used the same mix that I used for the TX Twinkies, but you could substitute that mix with this one. 1/2 cup of shredded cheddar cheese and 2 tablespoons of Ranch Hidden Valley Packet. Pro Tip – Don’t use the big Sour Dill Pickles; the sourness is too much for this recipe. Use the normal-sized regular Dill Pickles. They have the right amount of acid to go […]

Texas Stuffed Jalapeños with Smoked Brisket

This stuffed jalapeno recipe uses leftover chopped brisket that I had in the freezer and pepper jack shredded cheese along with cream cheese.  The flavors of these ingredients with the kiss of smoke that these little nuggets of goodness get, makes them taste amazing.  This little dish is great as a party appetizer or as a side dish. The jalapeno popper is a term that has been around since 1972 in Texas.  In 1993 the Poppers Supply Company of Portland, Oregon trademarked “Poppers” when used for “coating and breaded vegetable pieces.”  For the complete history, check out Wikipedia.

Easy Breakfast Casserole

This is my favorite breakfast dish because it’s loaded with meat and is quick and easy to prepare! It’s even better leftover & for meal prepping. I like to make this on a Sunday evening so that I have something quick for breakfast all week long. If you want you can add chopped onions & peppers in your egg mixture as well if you like. Feel free to add and remove ingredients to your tasting.

Tasty Brussel Sprouts

As a kid, I thought that Brussels sprouts were the most disgusting green veggie on planet earth (well, maybe second to spinach). I am pretty sure I have figured out why we didn’t like Brussels sprouts as kids.  If your parents were like mine, they boiled the life and taste right out of them! This past summer I went to my sisters lake house and she made Brussels sprouts to go with our dinner.  I wasn’t very excited about this because it was the only side dish.  Her and my lovely wife told me that if I’m going to be the TX […]
