Refreshing Cucumber Jalapeno Salad

This refreshing cucumber jalapeno salad is easy, light, and refreshing. It pairs nicely with Smoked Brisket or Pulled Pork and will be the next hit of your summer party.

Let’s Talk Cucumbers

Did you know that there are close to 100 varieties of cucumbers throughout the world? Most of them can’t be found here in America. We will be talking about the two most common varieties of cucumbers in this post.

English Cucumbers

For the best results, we like to use English Cucumbers, also called seedless or hothouse cucumbers. They will be long and skinny wrapped in plastic. There is no need to peel the English Cucumber; the skin is thinner and edible compared to regular salad cucumbers.

Salad “Normal” Cucumbers

You will want to remove most of the peel as it tends to be a little bitter and sometimes tough to eat, I like to leave the peel or remove a little, but that’s just me.

Prepare The Vegetables

For this refreshing cucumber jalapeno salad recipe, I decided to go with Salad Cucumbers and not to peel them. I went this way because I am slicing them so thin that the peel should be easy to eat with little to no bitterness. I use a mandoline to slice all the ingredients for this side dish so that every piece is the same thickness. Next up is the onion. I use red onions in this; however, you can use white onion if you prefer. The final vegetable for this dish is the jalapeno. Now you don’t have to use this, but if you’re looking for a little heat, I suggest using it. I like to cut the top off and then use a small paring knife to clean out most of the seeds. Then just like with the onion and cucumber, I use the mandoline and slice it thin.

Finish The Refreshing Cucumber Jalapeno Salad

Please take the vegetables and add them all to a bowl that you have a lid for, that’s important. Up next, let’s add the white vinegar and salt and pepper. Finally, put the lid on the bowl and gently shake it up to coat the vegetables with the vinegar, salt, and pepper. Taste it and add more salt or pepper if needed. Put the dish in the refrigerator for a couple of hours and then serve it.

Ingredients

Scale
  • 2 cucumbers
  • 1/2 red onion
  • 2 jalapenos with the seeds removed
  • 1/3 cup white vinegar or cider vinegar
  • salt and pepper to taste

Instructions

  1. Wash cucumbers and peel if desired. Thinly slice cucumbers, onions, and jalapenos.
  2. Mix vinegar, salt, and pepper with cucumbers, onions, and jalapeno.
  3. Refrigerate at least 1 hour or up to 4 hours. (Stir or toss a few times while marinating).
