Description

This easy pulled pork stir-fry recipe is a healthy and low carb meal. It comes together fast you can have dinner ready and on the table in 15 minutes.


Ingredients

Scale
  • 2 cups of pulled pork
  • 1/2 onion sliced
  • 1/2 green bell pepper sliced
  • 1/2 red bell pepper sliced
  • 1/2 orange bell pepper sliced
  • 1 cup of frozen green beans
  • 1 garlic clove chopped
  • 2 tbs coconut oil
  • red chili flakes – optional

Instructions

  1. Heat coconut oil in a large skillet over medium to high heat.
  2. Add onions and saute for 2 minutes before adding garlic. Continue to cook for 1-2 minutes until softened and onions lightly browned.
  3. Add pepper and carrots and saute for a few minutes.
  4. Reduce heat slightly and add the pulled pork. Stir for 3-4 minutes to warm pork.
  5. Add low sodium soy sauce and continue to stir for 1-2 minutes.
  6. Plate and garnish with red chili flakes.

    I had some left over pork that I made in the crockpot and prepared this dish. The wife loved it!

  2. Try mixing barbecue sauce and soy sauce to mix in with it.
