Description

Quick and tasty breakfast recipe. This breakfast is even healthy!


Ingredients

Scale
  • 2 large eggs
  • 1/4 cup already cooked crumbled breakfast sausage
  • 2 tbsp chopped red onion
  • 1/2 cup raw spinach
  • 1 tbsp avocado oil (or olive oil)

Instructions

  1. Add avocado oil to your non-stick pan and heat up with medium heat.
  2. Add already cooked crumbled sausage, chopped onion, and spinach to the pan and cook until spinach is shriveled up.
  3. While cooking the ingredients in step 2, let’s take the 2 eggs and mix them in a small bowl.
  4. Now pour the eggs over the mixture in the pan and cook until the eggs are cooked to your liking.  You can scramble them or even make an omelet.
  5. Serve with your favorite fresh smoked salsa.

Notes

You can use another protein like bacon, leftover smoked brisket, or pulled pork, heck you can even make it a veggie scramble.
